Hace años, El Pailón Charlotte nació del mismo sueño que comparten tantos inmigrantes: construir un futuro mejor sin olvidar nunca de dónde venimos.
Years ago, El Pailón Charlotte was born from the same dream shared by so many immigrants: the desire to build a better future while never forgetting where we came from.
Llegamos a este país con esperanza, con ganas y dispuestos a trabajar más duro de lo que jamás imaginamos. Como muchas familias, al principio El Pailón no era nuestro trabajo de tiempo completo. Trabajábamos días largos... y noches todavía más largas. Doble turno. Triple turno. Cada hora de sacrificio tenía un solo propósito: crear algo que valiera la pena.
We came to this country with hope, determination, and the willingness to work harder than we ever thought possible. Like many families, El Pailón wasn't our full-time job in the beginning. We worked long days... and even longer nights. Double shifts. Triple shifts. Every hour of sacrifice had one purpose: to create something meaningful.
No queríamos simplemente abrir un food truck. Queríamos traer un pedacito de Colombia a un lugar donde no se encontraba.
We didn't want to simply open a food truck. We wanted to bring a little piece of Colombia to a place where it couldn't be found.

Lo más difícil no fueron las horas largas ni los sacrificios. Fue creer que era posible: que una comida sencilla pudiera hacer que alguien se sintiera cerca de casa otra vez, aunque estuviera a miles de kilómetros.
The hardest part wasn't the long hours or the sacrifices. It was believing that it was possible: that a simple meal could make someone feel close to home again, even from thousands of miles away.
